Perfect Pair: Roasted Asparagus

The key to good asparagus is not to over cook it.  Think:  crisp crunch and not soggy.  This is a wonderful spring side dish.  Enjoy!

The Dish:  Roasted Asparagus

The Recipe:  

1 bunch asparagus
Garlic Salt
Pepper
Olive Oil

Preheat the oven to 400 degrees.  Spray a baking sheet so the asparagus doesn't stick.  Snap off the ends of the asparagus.  Spread the asparagus onto the pan.  Drizzle olive oil and sprinkle with garlic salt and pepper.  Roast for 8 minutes.  

The wine displays a bright straw color that screams tropical fruit in the glass. The fresh acidity adds to the longevity of an array of white pear and melon with an undertone of guava. An unpretentious wine that over delivers on the nose and palate, stating itself as an any occasion companion.

It isn't easy to pair asparagus, but this works so nicely.  Each sip takes me back to my time spent in Cape Town wine country.  The landscape is breathtaking.  I hope to visit Simonsig someday.
