Dinner Tonight: Chicken Quesadillas

I love buying a rotisserie chicken and making these quesadillas. They are a perfect week night treat.  Even if you don't have a rotisserie chicken, grab a pack of breasts and fry them up over the stove.  Serve with some tortilla chips and guacamole.  I'm going to make some of these tonight.  Wash them down with Sangria or Margaritas.

4 Flour tortillas
2 tablespoons Jalapeno Black Bean Bruschetta (or black beans, corn, tomatoes and jalapenos)
3/4 C shredded cheddar cheese
½ C shredded chicken
½ of an avocado (sliced)
Salt
Sour Cream (Snowville Creamery)
Salt and pepper to taste
cooking spray

Heat a skillet to medium, spray with cooking spray, and place one of the flour tortilla shells on the skillet. Sprinkle on half of the cheese, half of your garlic, half of your Jalapeno Black Bean Bruschetta, half of your chicken and half of your avocado. Put another tortilla on top.

After cheese has started to melt and tortilla has browned, flip and do the other side. Repeat with other quesadilla.

Cut each quesadilla into 4 pieces and serve with sour cream.

* For a healthier version, substitute Greek yogurt for sour cream.
